I gotta confess I like The Band's cover of 'Who Do You Love' (the old skool one w/Ronnie Hawkins, pretty damn good rendition of this one on 'The Last Waltz' film & album) better than any others I've heard (Orig: Bo Diddley)
Most of Joan Baez's record of Dylan covers from the 60's/70's (which are on the LP 'Any Day Now': ) I initially loved
And now I hate all but these 2:

&
"I Shall Be Released"
Buckley's cover of L Cohen's Hallelujah tops the orig very nearly imo

The Cowboy Junkies one was OK
Fave is by an obscure & now defunct regional (mostly) band called Gambler.
Can't think of the other one. It'll come to me when it doesn't matter any more
