French-style Tabouli?

Hey there,

When living in Marseille and Paris, I ate prodigious quantities of French supermarket tabouli (or "tabouleh", or "taboulé", if you will). It was especially good, and quite different from anything I can find here. The main difference was I think they use couscous instead of bulgur, and there's way less parsley and tons of tomato. It's really lemony and yummy, and perfect for summer.

Has anyone ever had it before? And for the French KR people (or anyone else that knows what I'm talking about): any tips on how to make it at home?

Well, I attempted to make taboulé with ingredients that I remember being in it, and it came out SO GOOD. Here's what I did, in cause anyone's interested:

Taboulé ŕ la menthe

Ingredients for vinaigrette:

1/4 cup lemon juice
1/4 cup lime juice
a few dashes of black pepper, salt, and basil
2 tbsp olive oil
1/4 white wine vinegar

Ingredients for taboulé:

2 cups of plain couscous
4 large tomatoes, finely chopped
one white onion, finely chopped
4 cloves garlic
1/2 cup fresh mint, finely chopped
a few dashes of freeze-dried parsley
salt and pepper
1 cup shredded carrots
3/4 cup golden raisins
3/4 cup chick peas

optional: 1/2 a cup of red and/or green peppers, finely chopped

Directions

1.) Cook the couscous according to package directions. Let cool for about 20 minutes.

2.) Mix your ingredients for the vinaigrette, blending thoroughly.

3.) Combine chopped tomatoes, onions, and garlic in a small bowl. Let marinate while chopping the rest of the ingredients.

4.) Combine couscous and all remaining ingredients, including the tomato/onion mixture. Stir in the vinaigrette.

That's it! Keep in mind that these are approx. measurements, so you may want to add extra lemon juice or seasonings, etc. But this is basically it, and it's YUMMY.

That sounds excellent. The four cloves of raw garlic sound fierce, but delicious.
