pro tip: madre & i set up a tray or plate with shifted confectioners sugar to transfer the cookies onto when they come out of the oven. then we hit them with more confectioners sugar on top & again after they've cooled a bit. we use a little shaker thing like they have at coffee shops for cocoa or a small fine mesh strainer.
also helpful to place dough balls in the fridge after rolling until ready to bake. you can prepare a whole bunch this way & they keep their shape better if your kitchen is warm.
madre adds chopped pecans to her dough. cinnamon is also good.
