pro tip: madre & i set up a tray or plate with shifted confectioners sugar to transfer the cookies onto when they come out of the oven. then we hit them with more confectioners sugar on top & again after they've cooled a bit. we use a little shaker thing like they have at coffee shops for cocoa or a small fine mesh strainer.

also helpful to place dough balls in the fridge after rolling until ready to bake. you can prepare a whole bunch this way & they keep their shape better if your kitchen is warm.

madre adds chopped pecans to her dough. cinnamon is also good.

sweet and sour chicken.

I don't use certain amounts i just keep tasting.

Lots of tomato ketchup
PLenty of rice wine vinegar
2 tbsps (ish) brown sugar
little bit of cornflour
As many red chillis as you like or chilli powder

brown chicken chunks in the frying pan, then put in an ovenproof dish with red peppers, beansprouts, whatever veg. Pour the sauce over, stir it in and bake it.

This one i recently discovered. I found it on a crossfit site. SO FREAKING YUMMY. i have included my modifications, of which are quite a few. But I think it makes the recipe better.

~3.5 lbs. of boneless skinless chicken breasts
1 can coconut milk
1 sweet onion chopped
1 green and 1 red bell pepper chopped
1 minced jalapeno
2 tsp fresh grated ginger
2.5 tsp curry
2.5 tsp garam marsala
1T cardamon pods (or 1.5 tsp cardamon)
4 T butter
1 can tomato paste
1 cup yogurt when finished cooking

Throw it all in the crockpot. Don't even bother to mix it, just throw it in and put it on low for 8 hours. Fish out the cardamon pods and then take the breasts out and shred them and put them back in the sauce. Mix in the yogurt and then stir. You should have a nice thick, delicious sauce now. Add sambal oelek fresh chili paste to taste (or other favorite chili paste).

my husband *loves* this recipe and asked me to make it again immediately asfter we finished the first one. and its so easy!
I'm so making this next weekend!

i have the recipe memorized because they are so amazing but alas dieting means i can only make/eat them once a year.

2 sticks butter-unsalted preferably
1 1/4 cup flour
1 tsp vanilla extract
1/2 tsp salt
1/2 cup confectioners sugar (plus extra for dusting the baked cookies)

mix softened butter with sugar and vanilla. combine flour and salt and then combine with butter/sugar mixture until comes together in a dough-y consistency. roll into 1" or 1.5" balls. bake at 350 for 5-8 minutes. i like mine slightly underbaked in the center so i just do 5 minutes. let cool slightly after baking then roll in some additional confectioners sugar.

i'll post a healthy recipe next.
these sound very similar to greek shortbread cookies or 'kourambiedes' - only difference is that they also have egg yolks, and you substitute almond extract and rose water for the vanilla extract.
