I had THE most amazing meal earlier today. I was making an omelette and saw I had an avocado leftover that was soon going to venture into "overripe". I had this flash of inspiration - I diced the avocado into minute cubes, cooked the omelette and just as I was going to fold over the omelette I added the cubes with a pinch of cayenne pepper. I then flipped the omelette over and cooked it for a minute. The result was DELICIOUS! It may sound bizarre, but an avocado omelette is heavenly

I love pizza without cheese and avocado added at the last minute.
