options.

pitta bread with spinach, tomato and cheese in. obviously.

roast the tomatoes with some olive oil, salt and balsamic vinegar. when they are done pour the liquid into a jar and put some lemon juice in there too and a clove or two of crushed garlic. shake to emulsify. cook the pasta, serve it with the roast tomatoes and spinach and then pour the dressing over.

you could do a kind of potato bake with the potato. in layers in a dish in the oven so from bottom to top..
onion, tomato, spinach, potato sliced really thin, garlic, loads of cheese. i would fry the onions a tiny bit first and cook the spinach. and slice the tomatoes unless they are cherry ones.

Yes, they make a pigs blood sausage in Britain called 'Black Pudding' - its totally delish! Comes with herbs and spices too.

A few suggestions:

1) Chop some of the onions finely as well as some of the spinach, gently mash some of the tomatoes, add a bit of garlic and simmer on the stove to make a sauce, salt & pepper to taste. Let it cool, then freeze it for whenever you want a spag bol sauce.

2) With the potatoes and remaining onion you could do hash browns (tho you need an egg for that). Use the rest of the spinach, garlic and cheese (again, you'll need eggs) to make an omelette. Squeeze some lemon and sprinkle the juice over the hash browns.

3) If you're at a loss what to do with the pitta bread, do a variation of cheese on toast - slice the pittas into open halves, cut thin slices of or grate the cheese, lay it flat under the grill and about a minute into cooking, festoon it with sliced tomato, onion and a pinch of garlic.

If you have loads of stuff in the fridge you need to use up, I'd advise options 1 & 2 first, before the stuff goes off/past its' use-by-date
