My lovely meat-eating friend decided she was going try vegetarianism for a month, and I admired her courage. Being competitive, I decided to one-up her and try veganism for a month
I may or may not stick with it, depending on how I feel. Mostly this is an experiment, a journey...I love testing my limits.
So, share advice, tips, and recipes with five ingredients or less preferably.
Today I made Bean Soup...it was delicious. I would have taken my own photos if I had remembered. Next time.
* 1 medium onion, chopped
* 2 tsp minced garlic
* 2 tbsp oil
* 2 cups vegetarian broth or salsa (or a combination) -- I used broth, worked well
* 1 15-oz can diced or crushed tomatoes
* 1 15-oz can red kidney beans, rinsed
* 1 15-oz can vegetarian refried beans
* 1 15-oz can black beans, rinsed (I used pinto beans because I didn't have black)
* 1/2 tsp cumin
* pepper, to taste
In a large pot, sauté onion and garlic in oil. Add all other ingredients and bring to a boil. Reduce heat and simmer for about 10 minutes.
