i'm freaking out over curry right now. i want curry all day. tell me some good things to make. with curry. and tell me how.

thai green curry.

INGREDIENTS.

-some green chilli peppers. use from two to twenty depending on how hot the peppers are and how hot you want the curry.

-some coriander

-some ginger

-1 or 2 limes.

-a few cloves of garlic (I use about 5).

-a bunch of spring onions.

-coconut milk.

-thai fish sauce/nam pla.

-salt and pepper.

-olive oil.

pour a slug of olive oil into a bowl. add finely sliced garlic cloves. peel a nice lump of ginger and grate into the bowl. roughly shop some of the coriander and add it too. take the membrane and seeds out of the chilli peppers, finely shop and put in the bowl. chop spring onions and add them too. grate the zest of one of the limes, cut in half and add the juice. put some salt and pepper in there too and mix it all together.

fry it all in a nice big wok or frying pan.
add some vegetable of your choice (I like to use tomatoes, yellow peppers, courgette and aubergine) and if you are using meat then brown it in another pan or under the grill and add it in (if you're using prawns then add them in much nearer the end so they don't go tough). pour your tin of cocnut milk on. have it on a steady simmer. add some salt, pepper and a few teaspoons of sugar. add one tablespoon of nam pla/fish sauce, some more lime juice and a touch more coriander and serve when the coconut milk has reduced to your liking.

I did a really nice version of this the other day using red instead of green chillies, duck meat and pineapple chunks.

prefab easy peasy red curry

1 can coconut milk. i use light and it's good.
3 tbs thai red curry paste
3-4 tbs fish sauce (to your liking. i like more)
2 tbs brown sugar
any veggies fresh or frozen (i use about 24 oz frozen)
any meat or tofu (about a pound)

stire coconut milk, paste, fish sauce and sugar till boiling, add veggies and protein source. eat in ten minutes.

i agree that doing it the way to gelf is better, but i have little time. so i do it this way. in fact, i just made this. i used shrimp and am eating it right now. GOOD!

geek, you ought to try my way soon. I always used to do it using the paste but it's actually much quicker and easier than i thought it would be to make the paste from scratch. Whenever I cook it for someone else I always make them do the chopping to save me time, and because I get bored of it.
