I think its just that fat people can be good at swimming.
When I was a kid I was fat and yet good at swimming.

I always think of it a bit like walking/running. If I'm just leisurely drifting up and down I'm not getting tired so I'm probably not burning anything, its like I'm just strolling up and down the pool.
So when I go swimming for exercise I swim as fast as I can for as long as I can. I don't pretend I'm in a race exactly, but I do focus on going as fast as I can without totally wearing myself out so I have to stop every time I get to the end of the pool. And then when I get out I feel tired and my muscles feel more used.
