| | | yeah i like baking a lot and i'm pretty good at it. i think my baking turns out well because i just shut the fuck up and follow the directions to the letter. people who are used to being like "ooh, you know what! i really think this could use some of THIS!" are probably going to get a caved in cake that tastes faintly of dick.
oh and speaking of baking. so i just inherited a really nice standing mixer, and i totally want to use it. but on what. i am fantasizing about red velvet cake. anyone have a good recipe for it? i've seen like fifty online but they're all so different and i don't want it to be stupid. |

if you find an awesome red velvet will you let me know. i had the best recipe of all time and lost it. just make sure you are using buttermilk & dutch cocoa powder or it won't be right.

i used to use both ricotta and cream cheese for my cheesecake but i recently made one with just the plain cream cheese.

| | | For the cake:
400g plain flour
250g golden caster sugar
100g light muscovado sugar
50g best quality cocoa powder
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon of salt
3 eggs
142ml/small tub sour cream
1 tablespoon vanilla extract
175g unsalted butter, melted and cooled
125ml corn oil
300ml chilled water
for the fudge icing;
175g dark chocolate, minimum 70% cocoa solids
250g unsalted butter, softened
275g icing sugar, sifted
1 tablespoon vanilla extract
Preheat oven to 180 C / gas mark 4
Butter and line bottom of two 20cm sandwich tins.
In a large bowl, mix together the flour,sugars,cocoa,baking powder,bicarb and salt. In another bowl or wide necked measuring jug whisk together eggs, sour cream and vanilla until blended. Using a freestanding or handheld electric mixer, beat together the melted butter and corn oil until just blended (you'll need another large bowl for this if using the hand whisk; the freestanding mixer comes with its own bowl), then beat in the water. Add the dry ingredients all at once and mix together on a slow speed. Add the egg mixture, and mix again until everything is blended and then pour into the prepared tins.
Bake the cakes for 50-55 minutes, or until a cake tester comes out clean. Cool the cakes in their tins on a wire rack for 15 minutes, and then turn the cakes out onto the rack to cool completely.
To make the icing, melt the chocolate in the microwave - 2-3 minutes on medium should do it - or in a bowl sitting over a pan of simmering water and let cool slightly. In another bowl beat the butter until its soft and creamy and then add the sieved icing sugar and beat again until everything is light and fluffy. Then gently add the vanilla and chocolate and mix together until everything is glossy and smooth.
Sandwich the middle of the cake with about a quarter of the icing, then ice the top and sides too, spreading and smoothing with a rubber spatula.
Serves 10. Or 1 with a broken heart.

| | | Oh I heart baking and cooking of all kinds - I spend at least 1 and a half hours a day cooking (always from scratch). Cookies, flapjacks, cakes, flans, brownies, cupcakes, muffins, scones, breads - I love it all.
A little hint: if you add a teaspoon of icing sugar to your flour for any pastry (including savoury) it gives a better texture. | |
