simple and cheap vegan lunches and snacks

I wish to reduce the amount of meat and dairy I consume to kick start my diet and feel that vegan cooking is the way to go. I work so obviously take lunch to work and apart from the same old sandwiches, salads and occasionnally sushi I'm stuck in a rut. I dislike tofu but am fine with most other foods. Anybody got any ideas for vegan lunch and snack ideas on a budget.

vegan eating seems really, really difficult to me. If you can find a good vegan shop/deli/cafe nearby it makes life a lot easier.
Wild mushroom risotto is great
grilled half peppers filled up with couscous, although they are nicer with melted cheese on top
Tomato and basil soup with some herb-y tasty bread.

I'm not vegan but I really like vegan chocolate flapjacks and peanut/sesame halva, don't think that would be great for your diet though as they're loaded with sugar.

eggless salad - i use TofuMate seasoning by NewMenu
potato salad
breakfast scramble with hash browns
soy yogurt and add your own fruit to it (get a large container and it costs the same as dairy)

instead of peanut butter, get cashew or another nut for a change, for a nut butter and fruit spread sandwich.
