good soup recipies?

i swear the soup on the doorstep didn't inspire me.

anyone got any yummy recipies for soups? maybe something a bit different i can try as well =]

well it's not unique or speshul but you really can't go wrong with a nice potato leek soup this time of year:
wash well and slice up a couple of nice leeks and dry them.
sweat them in a dutch oven with half a stick of butter till they are nice and soft.
add about two or three diced potatoes. dosen't really matter what kind.
add some broth, chicken or vegtable.
cook until the potatoes are soft
take almost half the potatoes out and smash them up then put them back in
add some half and half.
let it heat up but not boil.
you can add some diced ham or crumbled bacon or leave it out. give it a taste and add salt and pepper as needed. if you have fresh chives they would be a nice garnish, but who has fresh chives in the middle of winter?

i suppose there are people who will want to puree this or (eww) serve it cold. but not me.

Italian Sausage and Potato Soup

INGREDIENTS

* 1 pound Italian sausage - if you like spicy, get a spicy sausage. i recommend.
* 3/4 cup chopped onion
* 1 slice pancetta bacon, diced
* 1 1/4 teaspoons garlic, minced
* 1 cube chicken bouillon
* 4 cups water
* 2 potatoes, cubed
* 2 cups kale, rinsed and julienned
* 1/3 cup heavy cream

DIRECTIONS

1. Preheat oven to 300 degrees F (150 degrees C).
2. Place sausage links on a sheet pan and bake for 15 to 20 minutes, or until done. Cut each link in half lengthwise, and then into 1/2 inch slices. Set aside for later.
3. In a 4 quart saucepan over medium heat, saute the onions and the pancetta for 10 minutes, or until onions are almost clear. Add the garlic and saute for one more minute. Add the chicken base OR bouillon, water and potatoes and bring to a simmer for 15 minutes. Add the kale, cream and reserved sausage, simmer for 5 more minutes and serve.

every year at least twice i do make one soup, though, and that is that bitch rachel ray's veggie chili. you put beer & refried beans in it.
