Vegan cake recipes

has anyone got any favourite recipes? i'd like to expand my repertoire as i've only got one that i like. it is a great cake though.

chocolate cake

10 oz self raising flour
8oz sugar
2oz cocoa
1 tsp bicarbonate
mix well

4oz creamed coconut dissolved in 15 fl oz boiling water
100 ml orange juice
add slowly mixing all the time
1 1/2 tsp vanilla essence
zest of 1 orange

put in 2 greased baking tins. cook in the oven for 30 mins on gas mark 2/150 degrees

for the topping
100g green and blacks maya gold chocolate and 2 tbsp soya milk melted in a pan
raspberry jam for the middle

Applesauce Spice Cake

* 1/2 cup molasses
* 1 cup applesauce
* 1 tsp. cinnamon
* 1/2 tsp. cloves
* 1 tsp. baking powder
* 1/2 tsp. baking soda
* 1 3/4 cup flour (I use whole wheat pastry flour)
* 2 tsp. ginger (optional)

Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick or pan-sprayed 8*8-inch baking pan, in a 350 degree oven, for 30-45 minutes or until it tests done.

The optional ginger makes an acceptable gingerbread. I have also had success leaving out the ginger and adding 3 or 4 tablespoons of cocoa (I guess you could use carob) to make a tasty but not very sweet or rich chocolate cake. If you use cocoa you might need to add extra sweetening, but that depends on your taste.

1 cup= 250 mg/ml

one ounce= 25 ml/25 mg

Chocolate Cream Pie:

1 package silken tofu
2 Teas spoons of organic vanilla extract
1 package vegan chocolate chips
1 vegan pie crust

Melt the chocolate on stove top and blend tofu in blender with vanilla until creamy...add chocolate and blend well, pour into pie crust and put in fridge.

This thing seriously takes about 10 minutes to make and i add some raspberry sherbet to it and its AWESOME.
