this is okonomiyaki - well sort of. i cant say its terribly authentic. but ive tried it at japanese restaurants and i still like mine better. basically okonomiyaki is japanese fast food where you mix vegetables, seafood/meat with batter and fry on a teppan. it is then served with okonomiyaki sauce. sometimes you can pick and choose what goes into your okonomiyaki at the restaurant - hence the usual translation of japanese pizza. but i still think its more of a pancake.
this batch of photos isnt very good but i promise you its really good and takes next to no time. you can also top it off with yakisoba. yakisoba and okonomiyaki are usually served together and have similar ingredients. if youre intersted in yakisoba, see the other thread. |

- 1 cup sliced cabbage
- 1 medium carrot, peeled
- 1 medium potato, peeled
- 1 onion, thinly sliced
- 1/2 cup plain flour
- 1 tsp dashi powder
- 1 egg
- 1/2 cup water
serve with: barbecue sauce, japanese mayo, bonita flakes  |

this is dashi powder - its base stock for most japanese food. made from dried fish, seaweed and heaps of MSG yum. i got the no MSG version which frankly isnt as good. in australia you can find this at the asian section of coles or woolworths. i dont know about you foreign folks. |

this is bonito flakes, which is dried bonito sliced paper thin. its has really nice sea taste to it. find it at asian supermarket. you can use it to make proper dashi but i just cheat and use instant ones. but dashi is made from boiling bonito flakes with seaweed. so if youre a strict vegetarian, you may want to stay away from things like miso soup. |

lightly mix together egg, flour, dashi powder (substitutable with salt & pepper) and water. dont over mix. |

add the batter into the pan, press around to create a round 1cm thick pancake. fry for about two minutes on medium heat. you can tell its ready when the pancake moves when you shake the pan.
EDIT: if you want to add seafood, meat this is where you do it. lay pieces of meat or seafood on top. it will cook when you flip it. i recommond thinly sliced pork or fresh squid ring. squid is really good. but i usually just have it plain. google for more ideas.

serve topped with barbecue sauce. you can also buy okonomiyaki sauce from a japanese/asian grocer. but its like $6 - ill just stick to the $2 bbq sauce thanks! tastes pretty much the same.
top with mayo and bonito flakes if you like. |
