or make a healthy stirfry with small pieces of chicken, lots of fresh veggies ,some soy sause..and (brown) rice..
or stuff a chicken breast with mozarella and wrap some good italian ham around it (or bacon, hehe), and bake it in a apn, thats good too.. |

Do you cook that elaborate for yourself alone? I cant really make myself go all the way when I'm alone, I just make simple pasta's and salads mostly, and save the real cooking for when the bf comes along  |

| | Of course! Chicken in Rich Tomato and Basil Sauce with Pine Nuts & Olives (Serves 2) Ingredients:
3 tbsp. olive oil
1 clove of garlic, finely chopped
1 large onion, chopped
20g pine nuts
2 large chicken breasts, thinly sliced
1 450g tin peeled tomatoes
A few sun-dried tomatoes(small handful, add more for a richer, fuller flavour), chopped
Some olives, whatever colour, if you want them, no particular amount, just to taste.
Handful torn basil
100g feta cheese, cubed
2 fresh tomatoes, finely sliced
2 tbsp. tomato puree
2 generous servings of cooked Fusili pasta. Method:
Heat the oil in a large heavy saucepan and fry the onion and garlic on a low heat.
Add the olives and nuts, fry for another 3-4 mins 'til all's fragrant.
Add the chicken and stir-fry until just browned.
Add all the remaining ingredients, bring it to the boil and then simmer until the chicken's cooked and the luscious italienne flavours have melded into one mouth-watering mass....eh...usually around 20-30 mins.
Add pasta, heat and serve.
I like to serve with salad and some good crusty bread, preferably home-baked,

| | | i just experimented with cream of chicken soup. its noice. chicken stock
1 chicken frame
1 onion, peeled and halved
2 cloves garlic, halved
5 pepper corns
1 carrot, sliced
1 bay leaves
1 handful of fresh parsley (tied)
2 sprigs of rosemary (tied with parsley)
1 tbsp vegeta gourmet stock powder
some salt
2-3 litres of water (to cover)
1) put all stock ingredients in a pot. cover with water. bring to boil.
2) simmer for 1 hour.
3) skim off fat and filter off the veggies and herbs to get clear chicken stock. cream of chicken soup
1 tbsp butter
2 tbsp flour
1/2 cup milk
seasoning (salt, pepper, stock powder, garlic powder, sugar whatever)
1/2 L chicken stock
2 tbsp shredded cooked chicken
1) melt butter, add flour and whisk around until flour is cooked.
2) add milk to make a thick white sauce. whisk to get rid of all the lumps.
3) add chicken stock and whisk until desired consistency. taste. add seasoning (this depends on your taste obviously)
4) add cooked chicken, simmer for 5 minutes. |

| | | well last night I got two west country chicken legs on the bone from Sainsburys. coated them in a bit of flour with pickappa (jamaican fruity) sauce and cayenne pepper and grilled them for twenty minutes. They just weren't greasy or exciting enough for me, should I have fried them?
