| | | What's wrong with Teflon? I know straight aluminium is pretty bad because the alu itself is actually poisonous. That's why almost all aluminium drinks bottles are lined with a ceramic material of some sort. Cast Iron would be good in thermodynamic terms, but I couldn't see it having a particularly long life, since it's naturally quite a soft metal and corrodes easily.
I think in an ideal world, Titanium would be good, although its natural properties would make it very difficult to forge into a good-sized pan without costing the earth.
If I was gonna build the ideal pan, I'd use thick aluminium with a ceramic/cermet lining. |

| | Stainless steel?
I hear that some old folks got dementia from cooking in rusty pots all their lives. I have also ingested some rust in the past during desperate times |

| | | Though Teflon is nearly indestructible, it breaks down when exposed to high heat (572 degrees Fahrenheit and above). The fumes can cause flu-like symptoms in humans and kill a pet bird. The moral of this story: Don't broil in teflon.

| | | enameled cast iron is my personal choice.
le crueset
but thats for heavy cooking that requires or does better with retained heat. for cooking that requires changes in heat, or being super exact, copper cookware is the best.

| | | when you use copper cookware, remove the food as soon as it's done cooking. never let it set, or god forbid store food in copper cookware. very very bad science happens.

And cast iron is not soft, it can't be shaped like most metals because the carbon content makes it brittle. it can be shattered if hit hard enough; you can break cast iron baths with a sledgehammer or pickaxe for example. |

| | | I don't trust Teflon but it seems to be the only type of pans you can buy now. I'd perfer to use caste iron but it's terribly expensive. On top of that my nutrition teacher told me that when people ate out of caste iron pots hardly anybody had anemia. It helps with that I hear. I don't how true that is. |
