ThePrude's Vegan Pancakes
1 cup all-purpose flour
1/3 cup oat bran (fine)
1 & 1/2 cups soy milk
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp sugar
1 tsp vanilla extract
mix all dry ingredients, then wisk in soy milk.
Garnish:
beef tripe - ground up nice! |

i ended up having crepes with banana, maple and honey. yummers mcgee. they were dripping everywhere and i was making snorting sounds. |

170g white flour
3 tablespoons soya flour
1 teaspoon bicarb
salt/sugar to taste
make a well in the powder, then add
2 tablespoons of oil,
as much water as you want, gradually.
Fry them.
That's about it, although the recipe says to let it stand for 30 mins, I sometimes don't bother and it doesnt really make a difference :S. I always have crepes with jam, I'm one of those people that has a "main course" with savoury spread, then the "dessert" with lemon and sugar/jam; ala Mark from Peep Show  . |

My pancakes:
take half a pint of milk, crack in 2 eggs, whisk, then beat in flour until you reach the correct consistency. cook over a medium-high heat until golden brown underneath, flip until other side is browned, remove from heat. done.
Now, the variations:
Self-raising flour makes thick, beautiful fluffy ones. try with vanilla essence and a teaspoon of honey or icing sugar in the batter. replace milk with buttermilk.
Cooking in more fat at a higher temperature makes them crispy.
I advise cooking in butter, or preferably ghee.
now, the crepes. These are fucking difficult. keep the batter quite thin, and heat the pan until the oil starts to smoke (sunflower oil smokes at about the right temperature). take off the heat and, using only a little batter, roll around the pan quickly so a very thin pancake is formed. fill any gaps quickly with batter, return to full heat and flip quuickly. the resulting pancake is super-thin, delicate and crispy round the edge, and can be served sweet or savoury. |

extra-fluffiness for egg-containing pancakes: separate yolk from eggwhite and then whisk the eggwhite stiff before you mix together the ingredients. |
