Making vegetables more interesting...

... what do you do? I want/need to eat more but i find them so boring.

my mom was telling me just the other day to drizzle them with olive oil, a bit of balsamic vinegar, salt and pepper, and popping them either on the grill or in the oven to roast. she does this with zucchini, bell peppers, eggplant, onions.

i've found i'm more inclined to eat a big plate of veg if it's stir-fried in a tiny bit of oil and asian sauce. i've used those peas in the pod, brocolli, bell pepper, water chestnuts, asparagus tips, celery, green beans, bok choy.

sometimes just steaming asparagus and brocolli and then sprinkling with a bit of soy sauce makes them more appetizing as well.

this is true. a sprinkling of fresh grated parmesan, asiago, or romano is nice and salty and a little goes a long way because they're more pungent.

you could also just put them in a napoli sauce and blend them so its all one smooth sauce.

i'd put them in curries, stir fries as chezza mentioned, sauces, steam them as a side dish, pasta, etc etc.

i remember my finnish friend saara once told me she tries to incorporate veg into meals in different ways. for example, she will mix cooked spinach into mashed potatoes.

when i stayed with my friend jon in sweden, he made some really nice vegetarian dishes for us - one was something like a bulgar (sp), couscous type of thing sauteed with bell peppers and mushrooms. it was amazing.

Thanks! I like roasted veg but i never tried to make them before... i really should invest in a steamer.

just be a bit inventive with salads and side dishes and desserts. try blanched green beans and sunripened tomatoes with olive oil & basil as a side. grate a raw carrot into yellow rice. if you make anything mediterranean sneak in a few mushrooms. in summer ALWAYS have fruit as a dessert. keep a bunch of bananas around as a snack. and BEETROOT MOTHERFUCKING COLESLAW.

Agreed. Or some brummel and brown (butterish spread made with yogurt, it's really yummy) and some lemon juice. Or hide them in something like a quesadilla.

i toss all these spices in a processor then keep it in a jar for when i roast veggies.. it is yum.
3 tablespoons salt
3 tablespoons packed golden brown sugar
2 tablespoons paprika
1 1/2 tablespoons chili powder
1 tablespoon ground black pepper
2 1/4 teaspoons garlic powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons dried basil

you can pretty much eat what you want and still have a great figure, if you get enough exercise

otherwise, try low fat cheese or soya cheese (available in health food stores)

Put tomatoes, onions, oberguine (sp?), Courgettes & mushrooms onto a skewer and drizzle a chillie oil on them & then roast! It's so good

Try to replace meat with vegetables in some meals, so instead of having a chicken curry, have a vegetable curry, or bolegnese or chillie. Or mix loads of vegetables into pasta.

almost anything you can do with meat, you can do with portobello mushrooms. even people who don't think they like mushrooms have liked some of the things i've done with them.

that exactly what i do!!!

i ALWAYS use olive oil, 1-2 cloves of garlic, pepper, and sometimes parmasean cheese.
