| | | my mom was telling me just the other day to drizzle them with olive oil, a bit of balsamic vinegar, salt and pepper, and popping them either on the grill or in the oven to roast. she does this with zucchini, bell peppers, eggplant, onions.
i've found i'm more inclined to eat a big plate of veg if it's stir-fried in a tiny bit of oil and asian sauce. i've used those peas in the pod, brocolli, bell pepper, water chestnuts, asparagus tips, celery, green beans, bok choy.
sometimes just steaming asparagus and brocolli and then sprinkling with a bit of soy sauce makes them more appetizing as well. |

i'd put them in curries, stir fries as chezza mentioned, sauces, steam them as a side dish, pasta, etc etc. |

when i stayed with my friend jon in sweden, he made some really nice vegetarian dishes for us - one was something like a bulgar (sp), couscous type of thing sauteed with bell peppers and mushrooms. it was amazing. |

| | | just be a bit inventive with salads and side dishes and desserts. try blanched green beans and sunripened tomatoes with olive oil & basil as a side. grate a raw carrot into yellow rice. if you make anything mediterranean sneak in a few mushrooms. in summer ALWAYS have fruit as a dessert. keep a bunch of bananas around as a snack. and BEETROOT MOTHERFUCKING COLESLAW. |

Try to replace meat with vegetables in some meals, so instead of having a chicken curry, have a vegetable curry, or bolegnese or chillie. Or mix loads of vegetables into pasta. |

i ALWAYS use olive oil, 1-2 cloves of garlic, pepper, and sometimes parmasean cheese. |
