I blush at the drop of a hat, if I speak in front of people or become the centre of attention for some reason, and there is this guy at work who makes it his mission every day to make me blush and will say haha you've gone red, it's so embarrassing! What can I do about it?

I don't know if you would feel comfortable with it, but perhaps you should talk to him? Let him know how uncomfortable he makes you and ask him politely to stop? You may have already done that though.

Yeaahhh, I dunno, I'd probably just hurt him.

He finds it hilariously funny, I don't find it upsetting, it's just embarrassing.
Painting my face blue would just attract more attention to myself and make the whole situation worse.

I don't remember blushing. Ever. No one ever told me I blush. And people who have known me for years notice that I am uncapable of blushing, no matter how embarassed I might be.
