I think I have a great palate and I have the business savvy but I don't have the formal training so I would love to be a restauranteur that seeks out great talent and opens up new and exciting eateries in places that are open to new cuisines. I'm thinking introducing New American cuisine to cities like Tokyo, London etc. |

I love to cook. Lately I've been doing a lot of things with whole grains. I mixed some brown rice, red rice, wheat, rye berries, and pearled barley steamed with a chicaken broth. I blended it with red beans and tomato paste and onions and peppers and garlic. It was really healthy and quite hearty.
I want to make some corn bread and chili soon. I also want to braise some tomato / eggplant steak sort of thing to eat with my hummos. |

Pastry is more of a science, where all the proportions are set and if they aren't right then your cake comes out looking like a squashed hat.
I wouldn't say I would be confident in opening a restaurant, I'm certainly not good enough at the business aspect, but I'm looking around for a place that might need a sous chef. Or maybe I'll just commis at the French Laundry.
My latest ambitions have been duck-centric; I'm working out a few recipes with duck and apples, because I think the flavors pair very well. Pan roasted duck with apple cider and a saute of onion, carrot, celery, red potato, and apple is something I've been playing with but I still haven't quite gotten it how I want it.  I don't know what this smiley is for but I like it. |

I was flipping past the food network the other day and saw someone making this tart where they fanned out pieces of bacon in a shallow casserole dish, then inside, layered potato and cheese then folded the bacon up and over to make a "lid". I didn't catch the actual recipe, but I made my own version last night using turkey bacon, super thin sliced potato, cheddar, a layer of egg, asparagus tips and red onion. It was amazing! I was pretty proud of myself. |

| | hi.  i'm a big fan of cooking, i think it's in my genes.
i make my bf and i supper everyday, i ususally just make pretty quick and easy stuff like pasta and fish. I'm also a huge crockpot user. i love my friggen crockpot. i like being able to get home and have a yummy meal waiting. my newest obsession is stuffed stuff. stuffed peppers, double stuffed potatoes, stuffed tomatoes, stuffed mushrooms. i just like stuffing stuff into other stuff.
i'm not much of a baker though...just cooking. i can make muffins from a packaged...but that's pretty easy.  i'm ashamed of my lack of baking sometimes.
also...wtf is up with my breadmaker? it makes bricks instead of bread. half of the bread is so light and fluffy, the other half is so thick and dense. makes me sad. but that thing does make a mean garlic/herb pizza dough. | | Thread Tools | | | | Display Modes | Linear Mode |
